- 1 teaspoon chopped chives

A sweet twist on a Sunday brunch favorite! We stay true to the Eggs Benedict with one exception – instead of the usual English muffin we used our Liege Butter waffles. A brilliant decision, as you will easily taste and agree. Don’t be hesitant to poach the eggs or make the Hollandaise sauce, they are really easy AND worth it. Delmonico’s Restaurant in Manhattan takes credit for the creation, way back in 1894.
Preparation Instructions
Cook the Canadian Bacon (or Smoked Salmon Substitute)
- Heat a pan over medium heat and cook the Canadian bacon on both sides until fully cooked, with lightly crisp edges. Set aside.
- Alternatively, you can substitute the Canadian bacon with smoked salmon for a rich and flavorful twist. Simply slice the smoked salmon into serving portions and set aside—no cooking required.
Poach the Eggs
- Gently crack the eggs over boiling water.
- Use a spoon to swirl the water around the egg to help it maintain a round shape.
- Cook for a few minutes until the egg whites are set and the yolks begin to thicken but remain soft.
- Use a slotted spoon to remove the eggs from the water and let any excess water drain off.
Heat the Waffles
- Warm the waffles in the oven according to package instructions or until heated through.
Prepare the Hollandaise Sauce
- In a small saucepan, whisk together the eggs, water, and fresh lemon juice.
- Cook over very low heat, stirring constantly, until the mixture begins to bubble slightly around the edges.
- Gradually add butter, one piece at a time, whisking continuously until the butter is melted and the sauce thickens.
- Use immediately for best results.
Assemble and Serve
- Place the heated waffles on a plate.

The Monte Christo sandwich is considered a variation of the French 'Croque Monsiur' first served in Paris bistros in the early 1900’s. It was found on many diner menus after being introduced at Disneyland in 1966, at their Blue Bayou restaurant. A cross between french toast and a grilled cheese sandwich, it is a simple and delicious sandwich when made with our sweet, crunchy Liege Butter Waffles! The eggs, heavy cream, and labor of mixing and dipping into an eggy mixture are no longer needed. Our Liege waffles already bring the sweet richness that Challah or Brioche bread without the time, labor and mess that dipping into a mixture of eggs and heavy cream does…and tastes great!
